Jam Diagonals are delightful, buttery cookies with a touch of sweetness and a hint of tartness. Each bar is shaped into a rope with a gentle hollow in the center, filled with smooth raspberry jam that bakes into a deliciously soft, fruity layer. After baking to a golden brown, the cookies are drizzled with a zesty lemon glaze, adding a tangy finish that perfectly complements the rich jam. These elegant, bite-sized treats are perfect for sharing at gatherings or enjoying with a cozy cup of tea, making them a charming addition to any dessert spread.

Directions
Preheat oven to 350°F. Grease cookie sheets.
In a large bowl, cream margarine, sugar, vanilla, and salt until fluffy. Gradually stir in flour until blended.
Divide dough into thirds.
On a lightly floured surface, using your hands, roll each piece of dough into a 9-inch rope. Place ropes 3 inches apart on the cookie sheet.
Using your fingers, make a ½-inch hollow down the center of each rope (the rope will flatten slightly).
Fill the hollows with raspberry jam.
Bake for 15 to 20 minutes until golden brown. Cool on the cookie sheet.
Glaze:
Blend confectioners' sugar and lemon juice until smooth. Drizzle over the jam.
When the glaze is set, cut diagonally into 1-inch bars.
