Ingredients

2 cups flour

1 cup brown sugar

1 tsp. baking powder

1 tsp. salt

⅓ tsp. baking soda

2 eggs

½ cup margarine, softened

1 cup mashed ripe bananas (2 medium-size bananas)

½ cup chopped walnuts

¼ cup wheat germ
Directions
Preheat oven to 350°.
Grease and flour loaf pan.
Sift together dry ingredients into a large bowl. Add eggs, margarine, and bananas, and mix well. Fold in nuts and wheat germ. Mixture will be thick.
Pour into loaf pan. Bake for 65 to 75 minutes, or until toothpick inserted in center comes out clean. Cool completely before cutting.
If desired cake can be sprinkled with confectioners' sugar when cooled.
