Ingredients

3 cups flour

1 tsp. baking soda

2 tsps. cinnamon

½ tsp. salt

½ cup oil

2 cups sugar

2 tsps. vanilla extract

2 cups grated raw carrots
-
1 cup drained crushed pineapple
-
1½ cups chopped walnuts

3 eggs
Directions
Preheat oven to 350°.
Grease and flour a 10-inch tube pan.
in a small bowl, sift together flour, baking soda, cinnamon, and salt. In a separate large mixer bowl, beat together oil sugar, and I teaspoon vanilla. Add half the flour mixture and mix well. Beat in carrots, pineapple, remaining teaspoon vanilla, and nuts. Add remaining flour mixture and beat well Beat in eggs, one at a time.
Pour batter into greased tube pan. Bake for 70 minutes.
Cool completely before cutting.
