4 eggs

1½ cups grated raw carrots

1 cup raisins (Optional)

2 cups flour

1 tsp. baking soda

1 tsp. baking powder

Pinch of salt

¾ cup oil
Directions
Preheat oven to 350°
Grease and flour a 9-inch square cake pan.
In a large mixer bowl beat sugar and eggs. Stir in carrots and raisins. Silt flour with baking soda, baking powder, and salt. Alternating oil and flour mixture, add to carrot mixture and mix well.
Pour into greased and floured cake pan. Bake for 55 to 60 minutes or until toothpick inserted in center comes out clean. Cool completely before cutting.
