A Never-Fail Sponge Cake is a light, airy cake with a fluffy texture and delicate sweetness.
Ingredients

5 eggs, separated

⅛ tsp. salt

1 cup sugar

2 Tbsps. lemon juice

1 tsp. grated lemon rind

1 cup flour
Directions
- Preheat oven to 350°.
- In a medium mixer bowl, beat egg whites with salt until foamy. Add ½ cup sugar and continue beating gradually until stiff. Set aside.
- In another bowl, beat yolks until light yellow in color.
Add remaining ½ cup sugar, continuing to beat. Add lemon juice and rind. Gradually add flour. Gently fold in whites until completely blended. Pour into ungreased 10-inch tube pan.
- Bake for 50 minutes or until top springs back when touched lightly in center. When done, immediately invert on top of soda bottle. Cool at least 3 hours so that it will not fall. When cool, loosen edges and remove cake from pan.
