3 cups flour

1⅔ cups sugar

1 tsp. salt

3 tsps. baking powder

3 tsps. instant coffee

½ tsp. maple flavoring

¾ cup shortening

¾ cup nondairy creamer

¾ cup water

3 eggs

½ medium-size ripe banana, mashed

½ ripe banana, sliced
-
½ cup margarine, softened
-
1 tsp. lemon juice
-
2 cups confectioners' sugar

½ cup chopped nuts
BANANA FROSTING
Directions
Preheat oven to 350°.
Grease and flour bottom only of 9x 13-inch cake pan.
In a large mixer bowl, combine all cake ingredients and blend at low speed Until moistened. Then beat for 3 minutes at medium speed, scraping bowl occasionally.
pour batter into prepared pan, spreading to edges. Bake for 25 to 30 minutes until top springs back when touched lightly in center.
Cool completely, remove from pan, and frost with banana frosting. Sprinkle frosting with nuts.
BANANA FROSTING
In a small bowl, cream banana, margarine, and lemon juice. (Mixture may look curdled.)
Blend in confectioners’ sugar. Beat until creamy.
